I don't have first-hand experience with cameras; it looks like there are at least two simple hobby modules: ESP32-CAM and ARDUCAM. Perhaps check them out?
Cameras are a bit of a special case because there is a limited market for generic modules: if you're building a phone or a digicam, you want something custom; if you're building industrial automation, you usually buy a self-contained camera in a metal box that uses some gigabit-speed bus - HD-SPI, HDMI, USB C. You could do that with a sufficiently beefy MCU, but the cameras cost quite a bit.
Any recommendations for a simple camera to connect to one of these? It doesn't need to be color or have a high frame rate.
